Ingredients
- 3 medium zucchini, spiralized into noodles
- 1 cup cherry tomatoes
- ¼ cup pine nuts
- ¼ cup chicken or vegetable broth
- 1 can small white beans (~15 oz)
- 3 tbsp pesto (olive-oil based, minimal ingredients, or homemade)
Instructions
Heat olive oil in a large skillet and sauté until softened.
Add the garlic and cherry tomatoes.
Add the broth and simmer a few minutes.
If using chicken, cube and sauté it, then stir in the zoodles and beans.
For homemade pesto, blend all pesto ingredients in a food processor and set aside.
Toss everything with the pesto and serve — hot or cold.
