Ingredients
- 1½ cups cooked quinoa
- 2 Persian cucumbers
- 10 oz salmon (season/marinate with coconut aminos and sesame seeds)
- ¼ cup mango, sliced or cubed
Instructions
Simmer the quinoa on the stove according to package instructions.
Bake the salmon at 400°F for ~15–20 minutes (or cube and air-fry).
Assemble the bowl and top with crumbled nori, sesame seeds, and dressing.
Serve cold apart from the salmon and quinoa — nothing else needs cooking.
