Ingredients
- 1 lb large shrimp (peeled)
- Bell peppers, cut into chunks
- Zucchini, cut into thick rounds
- 2 tbsp olive oil
- 2 cloves garlic, minced
Instructions
Mix the olive oil, garlic, lemon, paprika, salt, and pepper.
Toss the shrimp in the marinade and let sit 15 minutes.
Thread the shrimp, peppers, and zucchini onto skewers.
Grill over medium heat 2–3 minutes per side until cooked through.
Serve with steamed brown rice or a side salad.
