Serves several as a shared dip.
Ingredients
- 2 cans black beans (~15 oz each)
- ½ cup chopped tomato
- 1 cup corn
- ¼ cup chopped red onion
Instructions
Make the dressing first in the serving bowl.
Add all remaining ingredients and stir.
Serve in GF tortillas, with veggies (crudité), or with GF tortilla chips.
Tip: use leftovers as a taco filling.
